Tilapia Porridge

Oh no!!! Don’t let your leftover rice go to waste!!! Economy is bad, tossing the food away = tossing your $$ away. Went out to eat with my sis’ family yesterday, I didn’t mean to be ECONOMICAL, but I TOGO the leftover rice that was included with our entrees.  Here’s an easy recipe to turn your plain leftover rice into an awesome new meal!!!

Ingredients:
* 1 cup of leftover rice
* 3 cups of water (or if you like thinner soup style, use 4 cups of water)
* ¼ cup of ginger; julienne
* 2 tablespoons of sesame oil
* 1 piece of tilapia fillet; cut into bite size
* 1 scallion (optional); chopped

Direction
* Heat sesame oil in a small skillet and add in the ginger over medium heat, until aromatic.
* place the rice and water in a medium pot over high heat and bring to boil; add in the ginger.
* reduce the heat, cover and simmer for 20 minutes.
* add the tilapia fillet into the rice mixture; cover and simmer for another 10 minutes.

The egg itself is already very nutritional & yummy; eggs are the one of the most-have items that I must have in my refrigerator. You could do SO much with the eggs, boiled eggs, scrambled eggs, sunny-side-up eggs, eggs in the soup, eggs in the instant noodle… I can not live without EGGS…!
How to spice up your scrambled eggs without using the yummy buttery butter but still YUMMY?? My version of scrambled eggs is super easy, and it’s good for breakfast, lunch and dinner!!!

Ingredients:
* 2 large eggs
* 1 scallion; chopped
* half of onion (medium size); chopped
* 2 tablespoons of cooking oil
* salt & pepper (to taste)

Directions:
* in a medium size bowl; beat eggs, scallion and salt/pepper until fluffy.
* heat up the NONSTICK frying pan, add in the cooking oil; add onion into the pan when the oil is hot and stir fry them until aromatic.
* add in the eggs mixture over medium heat; do not stir right away, because you want to make sure the mixture will be combined together with the onion.
* turn to low heat and begin stirring once the eggs are 70% cooked.
* then keep stirring until it reaches to your desired consistency.

Chicken Meatballs Soup


Chicken Meatballs Soup

Meatballs… not necessarily spaghetti and meatballs… Yummy Meatballs… not necessarily made by ground beef… here’s a simple recipe of Chicken Meatballs Soup, healthy, fast, & easy!!!

Meatballs:
* 0.5lbs of ground chicken
* 1 scallion; chopped
* 1 teaspoon of cornstarch
* soy sauce (to taste; I only used ½ tablespoon of soy sauce, because I don’t like my food too salty)
Soup:
* 1/6 lbs of daikon (you really don’t need much; my whole daikon was 0.49lbs, and I only used 1/3 of it)
* 1 scallion; chopped
* 4 cups of water
* salt (to taste)
* 1 teaspoon of sesame oil

Directions:
* in a medium bowl, combine ground chicken, scallion, cornstarch & soy sauce; gently stir until the mixture is well mixed.
* how to shape the meatballs…?? I love the old trick that my mom taught me… grab a bunch of the mixtures in my hand, and squeeze it out in between my thumb and my index finger (see below pic).


* bring 4 cups of water to boil in medium pot; add all the meatballs into the pot and simmer
* when you see the meatballs cooked on top that means your meatballs are 90% cooked; add daikon.
* simmer for another 10 minutes and turn off the heat.
* season soup to taste with salt + sesame oil; add the scallion on the top of the soup.

Stir Fry Tilapia Fillets with Vegetables


 
My first post!!!! Woohoo!!! super excited, I’ve been prepared for this day for a very long time!!! 

I am not that professional enough and i DONT KNOW how to butcher a whole fish myself, the easiest & fastest way for me to prepare a fish dish is getting those "ready-to-go" fillets from the supermarket, but since it's already prepared by the supermarket people and deboned the fish for you, sometimes the price could very pricey. At one of my local supermarkets was having Tilapia Fillet on sale for $6 a bag (frozen)!!! What an awesome deal right?!?!

Here's the Super Hungry Chick version of Stir Fry Tilapia with Vegetables~ enjoy~ 

Stir Fry Tilapia Fillets with Vegetables
Fish:
* 2 pieces of tilapia fillets
* ½ teaspoon of corn starch
* salt (to taste)
* 1 egg white
* 1 teaspoon of rice or cooking wine
* 2 tablespoon of cooking oil
Sauce
* salt (to taste)
* ½ teaspoon of corn starch
* 1/3 cup of water
Vegetables:
* ½ small onion; cut into cubes
* ½ cup of mushroom
* 2 scallion; cut into 1 inch long
* 1 tablespoon of cooking oil
Directions:
* cut the fish into pieces; combined all the ingredients for the fish into a bowl, let the fish marinated for 10 minutes.
* heat up the skillet, add in the cooking oil; add all the vegetables into the skillet when the oil is hot and stir fry them until aromatic; remove from the skillet, put the vegetable into a plate. 
* add 2 tablespoons of cooking oil to the heated skillet, add the fish fillets and lightly sear both side of the fish.
* dissolve the corn starch in the water to thicken the sauce
* combine vegetables & fish together; add the sauce into the fish and vegetables
* stir fry until the fish is cooked.
